  • 4 thinly sliced Fiascone tomatoes

  • Take a croissant, cut it into 0.5 cm thick slices, then leave to defrost.
  • Wash the cherry tomatoes, then season with extra virgin olive oil, salt, oregano and sugar.
  • Put the cherry tomatoes in the oven for 30 minutes at 200°C.
  • Take two circles: one circle with a diameter of 10 cm × 4.5 cm high, and one circle with a diameter of 7 cm × 4.5 cm high.
  • Put the small circle inside the large circle, against the edge, to create a half-moon shape.
  • Arrange 8 slices of croissant upright in the space between the two moulds.
  • Place the other slices of croissant flat in the small mould.
  • Bake at 165°C for 35 minutes.
  • Thinly slice the Fiascone tomatoes.
  • Arrange the Fiascone tomatoes in a rosette pattern in the centre of the plate.
  • Place the croissant cut into a half-moon shape on top of the sliced tomatoes.
  • Place the rest of the croissant inside the half-moon.
  • Put mozzarella on top.
  • Add the confit cherry tomatoes, the roasted cherry tomatoes and the basil leaves.
  • Finish with a drizzle of extra virgin olive oil and a pinch of salt.
